Reading a Coffee Bag Like a Document

A practical guide to roast levels, grind, ratios and storage, with plain explanations of why one cup tastes bitter and the next tastes sour.

A bag of coffee tells you more than its price. The roast date, the origin and the tasting notes on the label describe what happened to the bean before it reached your kitchen, and those three facts predict most of what you will taste in the cup. Reading them carefully, and adjusting grind and ratio to match, is the difference between a drinkable cup and a repeatable one.

What the label actually records

Roasters print a roast date, not a best before date, because coffee is a fresh product with a short window. A bag roasted two weeks ago and stored sealed will taste different from one roasted two days ago, even from the same lot and the same roast level. Origin tells you the broad character: a washed Ethiopian lot tends toward floral and citric notes, a Brazilian natural lot toward nut and chocolate. Tasting notes are the roaster's own vocabulary for that character, not a promise that you will detect blueberry.

Roast level is the part most often misread. Light, medium and dark describe how far the bean was taken through the Maillard reaction and into caramelisation of its sugars. Light roasts keep more of the bean's original acids and read brighter and thinner. Dark roasts lose those acids to heat and gain bitter, smoky compounds from the roast itself. Neither is better. They simply require different brewing parameters, which is where most home brewers go wrong: they change beans without changing anything else.

Which grind and ratio fit which method

Grind size controls how fast water can pull soluble material out of the grounds. Smaller particles expose more surface, so extraction runs faster. The method dictates the target.

A pour over cone with a paper filter wants a medium grind, roughly the texture of table salt, and a ratio near 1:16 coffee to water by weight. A French press wants a coarse grind, closer to raw sugar, because the metal mesh lets fines through and a long steep at 1:15 keeps the body heavy. An AeroPress sits between the two: medium fine, 1:14 or so, short steep, then pressure.

Weighing matters more than most people expect. A tablespoon of coffee varies by bean density and grind, sometimes by several grams. A scale removes that variable, and it is the single cheapest upgrade to a home setup. Water temperature sits in the same category: 92 to 96 degrees Celsius for most methods, lower for dark roasts that are already soluble.

Why does one cup taste bitter and the next sour?

These are two ends of the same problem, and they are not the same fault.

Bitterness usually means over extraction. Water stayed in contact with the grounds too long, the grind was too fine, or the temperature was too high. The compounds that arrive late in extraction are harsh and drying, and they coat the tongue. The fix is coarse, cooler or faster, one change at a time.

Sourness, or a thin, sharp, salty quality, usually means under extraction. The grind was too coarse, the steep too short, or the water too cool to dissolve the sugars and acids that give the cup its sweetness. The fix runs the other way: finer, hotter, longer.

Telling them apart takes practice, because a badly roasted or stale bean can taste both flat and harsh at once. A simple test is to brew the same coffee twice, changing only the grind by one setting, and taste them side by side. The difference is usually obvious, and it teaches the direction faster than any written rule.

Can a bad batch be fixed?

Often, yes, and without throwing the coffee away.

If a pour over runs bitter, shorten the next brew by thirty seconds or coarsen the grind by one step. If it runs sour, extend the brew or grind finer. If a French press comes out muddy and bitter, the steep was too long or the grind too fine; reduce the steep to three minutes and pour off the grounds rather than letting them sit.

A batch that tastes weak but not faulty usually needs more coffee, not a longer brew. Increasing dose raises strength; increasing time raises extraction. They are different levers, and confusing them is a common source of frustration.

Cold brew is the forgiving method. A coarse grind steeped in cold water for twelve to eighteen hours extracts slowly and rarely turns bitter, which makes it a reasonable destination for a bag that has not worked well hot.

Does freezing ruin coffee?

Freezing does not damage coffee if the beans go in sealed and come out dry. The enemy is moisture and repeated temperature swings, not cold itself.

Beans kept in a sealed bag or jar, with as much air removed as possible, hold their character in a freezer for several weeks. The practical rule is to portion before freezing, so a bag is opened once and not returned to the freezer repeatedly. Condensation forms each time a cold bag meets warm air, and that moisture degrades the bean faster than room temperature storage would.

For daily use, a sealed container in a cool, dark cupboard is enough. Coffee consumed within two to three weeks of the roast date does not need the freezer at all. The freezer is a tool for surplus, not for the bag you are drinking from this week.

Storage, and the limits of any rule

Every parameter here is a starting point. Water chemistry, grinder quality and personal taste shift the numbers, and a ratio that flatters one bean will flatten another. The useful habit is to change one variable at a time, note what happened, and keep the note. A short log of roast date, grind setting, dose and time turns guesswork into something closer to a method.

That is the whole discipline: read the bag, set the grind and ratio to match the method, taste for the direction of the fault, and correct in small steps. The equipment can stay modest. The attention is what improves the cup.
